sex is determined by your chromosomes and unless there's some special genetic(!) abnormality - that's it
if someone doesn't "feel right" with his genetic sex, he/she either has a neurological or psychologial problem. there's nothing wrong with the body itself.
trans persons and whatever other flavours exists (like genderfluid and so on) are all delusions and should be treated as such.
sexual orientations (gay/lesbian) are something different - since those people don't have any issue with their self perception / body.

My view from this, if the distinction was actually important to make (e.g. in a medical context), is that four configurations are enough: One for either of two clear sex phenotypes, one for ambiguous cases in between, and one that fits neither. In legal terms, both of the latter are regularly categorized as "other", if at all.
So they would be reduced to 0, i.e. not fit to hire.

No there's no hermaphrodites. They do not exist in humans.
Hermaphroditism is both sets of sexual characteristics. The same areas of the embryo develop into sexual characteristics for either male of female. Intersex people have sexual features that are inbetween and do not fit classification, or they have normal junk but non matching chromosomes.
I acknowledge trans males and females, they biologically exists. So your code is not exhaustive.
