Encryption is only a valid form of protection when the attacker can't get their hands on you (for the aforementioned reason), nor keep the encrypted material indefinitely (because they could be able to decrypt it in say 50 or 60 years).

there is a ton - I mean a whole lot - of things stored on a computer, specially a windows computer, which you don't really think about. stuff stored in browser cache and other files, just the google-id stored in the browser can be used to connect you to google account(s) that have your entire history, the windows swap file tends to hold a lot of data including encryption keys and so on. so the only way to make sure is to overwrite the entire drive and reinstall.

also, a general tip, get a lawyer immediately and say absolutely nothing to the police. You just made a mistake by talking to the investigator. you absolutely should not do that, you can not and will not get any benefit what so ever by talking to the police. say nothing. even if you're totally innocent, just don't say anything but your name.

also, if you are raided, demand to be present and also make sure others are present. police do tend to steal things

this depends on the situation and so on. police raided me for a crime I really was totally innocent of and they confiscated my computer. the police took it and sent it to their forensic department (the police who do the confiscation don't look at it, nor do the investigators). the forensic people wrote a very short report back to the investigator saying it was encrypted. that dumb-as-cow investigator never bothered to contact me and ask. six months later I got a notice there would be no charges and I got the hardware they listed at confiscated back - but not the items they just stole and didn't list as evidence (and later denied taking).
