What Safari Extensions are you using? I'm looking for those made with the new API so they can't access any of your info.
At the moment I'm using Wipr, but apparently it's not supported anymore.

Don't use Safari. It was always pretty bad, and now, with Safari 12, apple has castrated the entire thing by not allowing unsigned extensions (the certificate costs $100/year) and by not allowing the old, compatible, JavaScript based extensions at all.
Use Firefox. Do yourself the favor. Sure, Safari is fast, but that's all it has going for it.

Using Mojave beta with uBlock Origin just fine. Never felt the need to use anything else.
You're forgetting the battery draw and performance. Unless you have a crucial reason not to use, Safari is the way.
