6 sata ports have been standard for most motherboards but the issue comes with when you try to use M.2 or other shit and it takes away sata ports

It doesn't. It's only an issue if you use a SATA SSD in the M.2 slot.

Most likely the motherboard OEMs can't be arsed to make a switching mechanism that can tell between a Sata M.2 drive and an NVME m.2 drive so it just disables ports when something is inserted its either that or there is actually too much connectivity for both the CPU and chipset can handle so stuff has to be disabled.
Either way its so fucking retarded that your given so much slots and ports on a motherboard nowadays but you can't use it all

Not if you're smart about it. Usually one of the M.2 socket disable sata if you use M2 Sata so just use an nvme on it. The other socket disable sata if you use nvme with full speed so either set it to x2 nvme or use a M2 Sata on it.
