I was going to address your paranoia in piecemeal, but I don't think it's worth the time taken to tell you, in detail, that Linux is more secure and the people chiefly involved in writing code for the kernel are hired by universities and tech companies to make it better for everyone, because bullshit like backdoors doesn't get past Linus and his team.
OTOH, Linux is more secure than Windows because in Windows you have the "User as an Administrator" approach, which doesn't give you any protection once a privilege escalation attack succeeds and the attacker takes over your entire system.

I use my CPU's iGPU for the X server and pass my 1080Ti to QEMU. I dedicate some CPU cores to the VM too. 99% performance, the only problem is that CSGO detects the hypervisor and kicks me in the middle of ranked games.

This doesn't trigger with shitty hardware. There are tons of bugs with this build that were never present in the insider builds because Microsoft clearly wasn't testing things properly for the final upgrade path.
Notebooks and desktops with some Intel NICs have CPU usage issues. Task Manager doesn't track CPU usage properly. Edge can stutter, and all EdgeHTML apps with it.
There's a lot wrong with this update.

but CS:GO runs natively on Linux. Why go through the hassle of running it in a VM?
2. Using Rufus (rufus.akeo.ie/), install the Ubuntu ISO to a flash drive.
3. Restart your PC and boot into your flash drive. Select the option to try out Ubuntu.
4. Try it out before installing it and get a feel for things like the UI, the Libre Office apps, and so on. Check if your display and GPU are properly detected. See if Youtube playback in Firefox is smooth. Maybe download Chromium, if that's your jam, and see how you like it.
5. Find a spare hard drive to install Ubunu on, and install it to that drive (don't put it on the same drive as Windows, and power down the Windows drive before you install Ubuntu). Now you can dual-boot by switching manually when your PC starts up. Most motherboards allow you to select the boot device by hammering F12 on start-up.
6. Just use Linux as much as you feel comfortable. Try out replacement apps with it. Install a game or two. Explore the App Store and you'll find installers for Discord, Steam, Mumble, OBS, Skype, almost anything you could want.
The point to this is that you don't go cold turkey. Going cold turkey is difficult, so easing into it is the key. Hang out in the Jow Forumslinux_gaming Discord to ask for advice if you're running into an issue.

The update broke the mouse pointer somehow, I had it set to the default pointer but it seems to have reverted to the windows 10 aero style pointer instead of the old one.
Selecting the old one also doesn't change it.

To be clear, it's not defaulted to On in the Settings menu. It's in the Disk Cleanup tool, soon to be deprecated, that it might be enabled. I don't have a machine with 1809 installed to check.
