With Evernote on the brink of sinking, I'm prepared to leave the ship. Been a paid user for 3 years and the app has _really_ approved my workflow. inb4 they read your stuff, I know it's true and it's another reason why I want to leave.
But what alternatives are there? There's nothing as comfy as Evernote. Do I give OneNote a shot? I'd really like to keep
there is Bear, but it's for Apple they store your data on Apple's servers though, and I imagine without end-to-end encryption so, not much of improvement at least I can use it on a mac with local storage only

I loved Evernote until they started to do some bullshit, like Syncing to just 1 device, etc.
What I did/do is:
Copy my simple and useful notes to SimpleNote (simplenote.com) FREE. I have iPads and iPhone/Android, the notes app in iOS is OK, but I also use Windows an Linux too, Simplenote works on them, aso works on the web.
For my articles: Pocket (getpocket.com) FREE. There's a Chrome, iOS web clipper, I reopened most of my Articles and send them to pocket for reading later, the Beta version of the app let you listen the articles. iOS, Mac, Android, Web.
Some Articles dont work on Pocket so I have to use MS OneNote, with the Chrome Web Clipper. I don't like One Note, but it's something at least.
I don't install it anymore on Windows or iOS/Android. Some attempts were mare on Linux to make some similar apps or ports, none worked as Evernote. I miss and will miss Evernote, but the developers starting to take bad decisions, so the best course of action is migrate to other more stable apps.

Tip: read SimpleNote's privacy policy, where it says they collect personal information by reading your notes.

Why don't you just git your notes like normal people and sync a folder of photos with what ever sync program is handiest to you, there are dozens of them.
