For example, I see tons of jobs listing Python, but I see very few jobs where Python is the primary language. I kind of think Python is inflated.

I don't work in IT/software development and Terry be my witness I never will.
I would actually say probably Java, sort of. Fullstack is probably one of the biggest earning categories but you'll be using more than just Java.
