Use whatever and encrypt your messages with GPG. The biggest problem with privacy-focused messaging apps is getting others to use them ("come on user just get whatsapp it's what everyone else uses it's much easier than me getting an app I'll only use to contact you!") and there are new ones popping up all the time. GPG, meanwhile, just werks.

signal is the best for simple stuff, but once a groupchat gets more than a couple people it can take minutes to send messages and there are some weird bugs
riot has a horrendous interface and some glaring bugs but it is getting a good redesign in the coming weeks and bugs will be fixed soon enough with purism banking on it for their phone
tox is almost good but lack of multi-device sync makes it useless
xmpp is good but there is no great mobile client and setup could be more intuitive
everything else has privacy problems
riot is the way to go
