You have to create your own video mode or at least understand how a video driver works and how ti use the win32 api/insert your favourite os video api. You have to know how a vblank works, what a framebuffer is, how do you get input from a controller. You can be hired to develop on basically any platform, any language etc...

tl;dr game dev using an engine will give you awesome results really quick but programming your engine frim scratch will give you enough knowledge for a lot of things. That literally applies for everything in life.
