Hackintosh is pretty much the same thing with Intel CPUs and GigaByte MBs. AMD which is hacked together to make the kernel boot is a mess, though.

The VM is stable when you get it running the first time, changing the settings in VMWare Workstation can fuck it up and cause failure to boot, but that's fixable.

What version of OSX are you using? I'm pretty certain High Sierra + will work with Pascal. You'll need the nvidia web drivers.

AMD does have their own architecture. Same with Intel. It's important to understand the difference between the ISA and the processor architecture. The ISA (x86-64 in this case) is just the interfaces that the CPU is exposing to the software, and to an extent, the firmware as well. Microcode is used to translate these instructions and feed them into what's basically a RISC code hiding underneath, which is more efficient at manipulating that translated data. Modern x86 processors are only CISC in terms of the ISA. The actual architectures that Intel and AMD have underneath that which they tweak between product lines like Ryzen whatever or Poopylake or shit like that are just variations of their own reduced instruction sets with a translation layer on top.

That being said, I haven't worked on x86 stuff in a long time so I'm not sure if there are brand specific features or instructions that an Intel-only OS like macOS would rely on. I don't think so because I've seen people within the last year building Ryzen hackintoshes.

AMD64 is exactly the same as x86-64 or x64. It's Intel's x86 architecture with AMD's 64-bit extensions.
