What makes modern MBPs so hated? And what's the best alternative that ticks the same boxes while avoiding those issues?

Get the air, if you don't care for performance.
Get the Pro if you want the 15 inch.
or a refurbished 2015 model.

I'm in a similar situation, OP. The Air seems to be the best option but I'm a little hesitant because of the processor. I don't do anything more intense than watch 1080p video so it would probably be fine

Needs to be able to handle photoshop/lightroom, and mildly demanding network simulations in linux VMs. I have a desktop PC at home for heavy lifting but I'd be a bit hesitant about the Air. Fucking dual core CPUs in 2018.

What's so bad about the memebar other than it being a bit of a gimmick? It's unnecessary but it's not like it drives the price up that much, I'd say the price gap between 2018 and 2017 MBPs is more so down to the hardware used.

The keyboard is either the worst thing in the world or the best thing since sliced bread depending on who you talk to,

The previous gens were shit(I am only talking about current gen) now you have double the cores and they solved throttling and keyboard issues but it's still costs a lot even for apple.

I love my computers to come pre-loaded with Chinese RootKits.

I tried the keyboard in a store and after a minute of adjustment it felt perfectly fine to use. Not much travel on them but I likd the way my fingers basically bounce off the keys, I'd rather have a shallow tactile keyboard than a spongy one. Compared it to a 2017 model though and I definitely see why it was hated, I wouldn't be able to deal with the noise on a laptop, these sorts of devices are supposed to be discreet.

It's true though. It doesn't slow down the workflow at all, and only serves to make certain tasks a tiny bit faster. Adjusting volume and brightness no longer requires taptaptapping or holding, you just drag it to where you want in one very swift motion.
The same thing applies to tasks like scrubbing to a particular part of a video or song. You don't have to move your mouse or use the number line or arrow keys anymore. It's just faster in a way that hotkeys can't really make up for. And you'd think the lack of tactile feedback makes the Touch Bar harder for touch typists to use, but actually muscle memory tends to take over once you get used to it and it doesn't slow you down at all. And the esc and fn keys are still there, they're just virtual. You can make the Touch Bar only display function keys if you want.
There's nothing to complain about with the Touch Bar, really.

Applies to both. There's no better alternative, you either live with the Apple's faults, which they refuse to fix for years just because they don't want to say they're wrong.

Alternatively, just move to a cheaper, more powerful laptop with some other OS. Windows is great for "just werks" and has all of the creative suite that Apple has. Linux systems can require effort, but they're endearing, and they can be fun to learn about, much like a hobby in a way.
