Primarily device drivers. Either each computer you use with it would have to be identical or you'd have to have it configured with an extremely wide range of drivers preinstalled.

USB drives are slow. Just get an external hard drive. They're quite small and faster than a USB drive.
My external hard drive has Manjaro and Windows 10 dual boot. I use it on my AMD desktop and Intel laptop and computers at my Uni's library. No issues.

A good LiveUSB should have a boot flag to force the whole OS into RAM. So you get a slow startup but after that it will be fast as fuck. Not good if you are on an old heap with low RAM of course, but minimal distros should work.

I did this for a while in various forms. First with Linux Live USBs using persistence, and then with Linux just installed straight on to them normally. I also tried SD cards for a while. What these two posters say is true:
It's slow as fuck, and you burn drives / cards out really quickly. The only way it works is if you just use a normal Linux Live USB setup like this:
But then you're back to everything resetting every time you turn the computer off (and Linux Live + Persistence just isn't as good as a proper installation). The last thing I tried was just installing it to a portable SSD, and that works, but only if you're not using a latptop / are okay with having shit dangling from your laptop. Internal is really the way to go, minus the whole thing where multiple OSes have to coexist on the same drive peacefully without Win 10 or OS X fucking your day up any time there's a major update.
Oh yeah, actually installing Linux to a flash drive and trying to run it on multiple machines can also be a headache, since it has to adapt to the unique hardware in each any time it's swapped. I had that working, but there was always an additional 90 second wait anytime I swapped laptops / desktops.

Random and Sequential speeds on a USB flash drive are horrible. I have done exactly what you're talking about. With Windows it sometimes hangs as it tries to load in the next action, for example when I click on the windows button, it can take two seconds for the start menu to pop up. I'd recommend installing it on an external SSD, like the Samsung T5, since that one runs perfectly fine for me.

flashing the os from usb to ram, using f2fs partition for storage, and a dedicated grubstick... theres ways to minimize impact on usb degresation. if you want good lifespan get a good usb device. check stats online and buy the one with most lifespan AND speed (important as well)

FreeNAS is designed to be run off a flashdrive. It basically just reads the OS into memory on boot and doesn't write anything to the USB unless you change a setting. Even then most of the info about your zfs pools and such are stored in the harddrives themselves.
You aren't going to run into any bottlenecks with FreeNAS because you aren't constantly reading & writing data to the flashdrive like you would with a regular operating system
