Install adb
enable developer mode on your phone
connect phone in debugging mode to pc
unlock bootloader through adb
install a custom recovery through adb
send over a rom file (zip archive) through usb
install it through recovery
done

There are a million more exhaustive, and idiot proof guides out there, with pictures and download links, but this is the gist of it.
Keep in mind the process wipes your phone clean.
The whole process is 15 minutes long net, and an extra hour or two with research, downloads, installations, backups and reuploads included.

I think a more accurate depiction is SOT, in that case the E5 Plus has a 5000mAh battery but might be too slow for your needs. Anything with a 3500+ mAh battery, 5.0-6.0 inch 1080P OLED (or sometimes LCD) display and SD 845 or possibly 855 down the line will have good SOT. The Moto One Power also has a 5000mAh battery with better specs but it has a notch. The OP6T's SOT is fairly good but that's probably because of the 3700mAh battery, OLED panel and software optimizations.

There's those fat chinkphones with 10000mAh batteries or more.
