how do you determine if a video's framerate is variable or not with ffmpeg?

This is my Ryzen 2600x running stock while playing Black Ops 4 on mostly high settings/ultra settings with 16gb CL16 (it's 15 but didn't match the QVL) ram and on a 1070.
I get between 90-150 fps but wanted to know if the temps and clock speeds look fine.
Also for overclocking, what should I be watching for while gaming when I try it?
