The alternatives are professional cameras that cost at least 3k, which are extremely bulky and inconvenient to carry around your daily life. There's also the danger factor unless you're living in a place like Europe.
So, if you asked me whether I wanted to shell out 3k (and more if you want lenses that specialize for different types of pictures) for a device that can only take pictures and that is extremely bulky and inconvenient to carry, vs a device that will suit almost every technological need in a neat package for less than half the price, then yeah I'm gonna go with the latter option.

megapixels doesn't matter when the image the mate 20 is outputting is roughly 2MP(and even less with low light see: ) whereas the rx100 will output 16MP.

you know how sensor size is directly correlated with iso performance and usability?
phones have to compensate a lot for their tiny sensors with a lot of post processing whereas regular cameras do not and in turn that makes the dynamic range non-existant on phones.
here's an example picture from the rx100, if this photo was taken with a phone the detail in the mountains and trees would be smooched all over the place and the rocks at the bottom would be pitch black dark, don't know how you've seen the mate 20 take better technical photos.
I'll give credit where credit is due though, the technology behind all the post processing on the phones with tiny sensors is impressive, just nowhere as good as slapping a piece of glass infront of anything above m4/3.
