I'd argue that more than DPI, polling rate is much more important in a mouse, because DPI is related to the movement of your hand, some pros use low DPI while other use a rather high one.
Just search for a 1000mhz polling rate mouse and with adjustable DPI and you are good to GAME ON.

it depends on the games you play. if you need precision it's better to have the lowest sens possible in-game and enough dpi to make up for it.

e.g. overwatch = 1 sens in-game, 3200 dpi
which is 4 sens in-game, 800 dpi but with pixel perfect precision (depending on the quality of your mouse obviously) for long-range snipes etc.

in fps like quake on the other hand it's better to have higher sens

the first thing you need to worry about is the ergonomics anyway. there are guides online, you should measure your hand and find the best mouse suited for you, other stuff like dpi etc. can be decided later

You are not going to find a mouse with 100mhz polling, that's 1 Ghz, maybe you meant 1000Hz?
Get a mouse with a decent sensor, google is your friend. It doesn't have to be perfect, should be decent though. Polling rate should be 500Hz or up.
DPI is basically just "cursor movement per distance moved", so higher dpi -> faster mouse movement. I don't run mine hiher than 3200 dpi though.

This. If you decide your mouse just by the sensor, or worse, looks, without even checking out the dimensions you're either gonna end up with a brick or a toothpick. Measure your hands first, then decide, you can spend $100 on a top tier mouse but if the dimensions are fucked for you it's gonna feel terrible to use.
