There's no real reason to custom flash a different rom nowadays. Better to de-google your phone manually and use the stock rom.

Why wouldn't it? I managed to degoogle my OnePlus 5 without any dependency issues and I didn't even root it, just used ADB.

I have a V30 and the stock rom has a worst camera than gcam, no battery charging light, quick tiles customization, not to mention the ui

Because OEM firmwares aren't open source. Sure, you can disable apps through ADB, but the proprietary OS still remains and microG wouldn't function. Not really escaping Google.

Well, at the very least I'd say performance is no longer the issue it used to be with stock firmware. I remember older android phones were useless without roms.
