Because when you build in batteries, like LiPo cells, you have to go through a whole load more certifications for safe shipping and storage. AA or AAA batteries take up a lot more room, which may be detrimental, and coin cells are extremely cheap, stable and you can get rechargeable versions.

Had the same problem with the remote for my garage door. It uses three button batteries of some obscure form factor. So obscure that I couldn't find them anywhere in my town. Gave up and hacked the fucking device to use three AA batteries instead. It now looks ugly and doesn't fit into pocket but at least works.
