I have a server but no monitor I can connect it to. Can I install or at least ssh/vnc in to my server during installation without a monitor?

I believe you would need something like IPMI for this to work. You don’t have a VGA to DVI adapter?

Create image on local machine, install in a VM if you don't know what you're doing and then save image
PXE boot server
ssh onto server
dd image to disk
grub-mkconfig > /boot/grub/grub.cfg
