How's the Sennheiser HD 559? Will I be able to tell the difference? Any other recommendation? I'd like them open.

Investigate HD600. There's plenty of reviews of that on youtube and else. You'll need to save up a little for it, but worth every cent.

I really like them. They're sorta my gold standard for balanced sound. Bass lacks impact, but it has decent extension. The treble region is somewhat subdued, but it extends really high, so they sound very detailed, yet not fatiguing. The mid range is just godly. The Sony MDR-CD900STs used to be my go-to mid-centric phone, but these dethroned them.

With your diet. The consistency will change depending on what you eat.

They won't sound the same after 50k hours of play time if you've actually worn them for 50k hours because the earpads will flatten and bring the driver closer to your ear while carrying less bass.
Aside from earpad changes, no, headphones don't measurably change through use. Things like paper cones might degrade at some point when exposed to heavy humidity but that has nothing to do with hours of play time.
