Long story short, i need to go back to Windows. which one should i choose if i plan to debloat whatever im installing?

LTSC is for when you just want a modern Windows but don't really care for anything Windows 10 has, it cuts all the UWP and cortona bull and keeps you feature frozen for 10 years or so but you still get security updates and bug fixes

You won't benefit from windows 10s "features."

i just want something stable that is less likely to crash during a live performance also kinda protects my privacy and doesnt sneak into my personal photos and videos

i'll give them a try but i need to use traktor/rekordbox/ableton/MIK etc.

both of them are great but rekordbox is great at organizing tracks. ardour doesnt support some of the vst's i use

Windows crashes are mostly caused by either drivers or bad hardware
It's very fucking rare for Windows to just crash outright on it's own without something external causing it. For the last 8 years from Windows 7 to Windows 10 I've had maybe 2 unexplained BSODs and both times it was fine after a reboot

If you have a 6-series or earlier Intel CPU or a pre-Rysen AMD, and you don't really need gaymes, install 7 (or 8.1 with classic shell or other start menu replacer).
If you have a newer CPU and/or need newest gaymes, get 10 (2019 LTSC, Enterprise or Pro for Workstations)
