reterminating them w/ rj45 couplers or punchdowns would work fine but the real problem is figuring out which cable is which. I pull cable for a living and so many times we've had a new guy get the end of a 20-30 cable run and just snip off the ends (with labels) to size. You'd be sitting there with a tone generator for a long ass time running back and forth from room to room, and that's if you even knew which cable was supposed to run where. It's likely you'd also be drawing out a map of every cat connection in the office and testing each one to find which ones were broken. Depending how complicated that run is that could take over a week. Some of those probably break off the trey into conduit that run up a wall to who knows where

No it wouldn't 230v is not enough to be "painful", just some tingling unless you're a child (for some reason getting zapped as a kid was much worse than it is now), also that isn't even 230v, only 110v.
But more important, power switches don't really have a neutral wire in them so you don't get the full current like you do when you get zapped on a wire, instead you either have the live -> wall current, which would be very small or the live -> light -> bulb -> neutral which would still be minimal depending on the power and type of lightbulb you have.
