I use Opera & Chrome.

Some porn & streaming sites are banned in my country so I use Opera’s free VPN to access those. I also have some bookmarks from my old Chrome use linked to Opera by G-mail. I also play games on it. I use Opera for most other purposes as well. So, I use Opera.
Chrome has some bookmarks linked with my iPad. I also use it for listening to songs on YouTube. So I use Chrome.

I really don’t care about my privacy. I mean, it’s not like for most (or all) of us our our browsing history is important. I would only care if I knew Google fucked me with my e-mail.

I’m not big on technology so I don’t use additional components.

This is actually on point. Do you have a source for the IceCat one, though? Also, did you verify if that paramater changes anything? AFAIK, one of IceCat's requirements is that the browser must not connect to anything on its own. So I think that telemetry parameter is a dead switch.

toolkit.telemetry.enabled is locked to true or false based on compile settings (see firefox-source-docs.mozilla.org/toolkit/components/telemetry/telemetry/internals/preferences.html) and doesn't do much itself. It influences the behaviour of other about:config entries like toolkit.telemetry.unified though.
Also the version present in Fedora's repos doesn't have this problem. I'm too lazy to check the official binaries (although I can't think of any reason how GNU fucked up like this, if it's true).

I wouldn't necessarily call it better, but it has all the things I want. There are a multitude of maintained addons, it offers a browser engine that isn't Blink, it is highly customizable (although some things could be less obscure) and since I compile my browsers from source I like their whole build system.
As for why the Beta version: I can't be bothered to keep up with Nightly's short update cycle (plus I never got PGO working with it) and I've had more problems compiling the release version than the beta.

If you're using a repo other than the release one, then add

ac_add_options --enable-update-channel=release

otherwise toolkit.telemetry.enabled will be locked to true and prevent you from disabling data collection in about:telemetry (the data won't be send as telemetry reporting is off by default for custom builds, but still...).
Personally I disable a bunch of other stuff (most notably the updater, crashreporter and WebRTC), but that's just a preference of mine.
Depending on how powerful your CPU is you might also want to tweak the optimization parameters.

toolkit.telemetry.enabled is a poorly named setting - it means "if you decide to send telemetry, send extended telemetry". AFAIK it's also locked to true in Nightly and Beta Firefox, and locked to false in stable.

The actual sending of telemetry data is controlled by datareporting.healthreport.uploadEnabled, which is obviously set to false by default in Icecat.

It's not on Windows. You can compile it yourself, but the GNU people won't do it for you.
There's somebody on Github who compiles it for Windows and distributes a binary installer for it. But it's not official, so it's up to you whether or not you trust them enough.

Adding adblocker of choice is the only necessary addition. It's not "better" than others, it's just what I'm used to as it was the only option for Netflix and other streaming services on Linux for quite some time that was reliable and didn't take a fuck load of dickery to get working right, plus the added bonus of all of my bookmarks and browser history as well as add-ons being synced to my Google account so all I ever need to do is login and all my stuff is how I want it on a brand new machine, and if I found something while browsing on my phone and bookmark it, it's available on my desktop and laptop when I get home... And should I forget to bookmark it but want to get back to a page later on a different device, I can just check my history and there it is.

I recommend ublock origin because umatrix is a meme and makes using a website a hard task. oh, And Jow Forums X of course.
The browser I'm using is better than the others because it has better security and better performance than Firefox and as a upstream browser it doesn't suffer from the problems of having delayed security updates caused by the the complications of maintaining a fork.
(idk how much of a real problem it is in the real world or if my distro mantainers are slower than the fork developers but I rather not risk it).
