no, the ssd's read/write performance won't change because of this. just cause you are at A and wanna go to B, the longer distance between A and B won't change the speed at which you run.
but encryption adds an extra layer right? surely the difference between an encrypted drive and a non-encrypted drive should be noticable?
Many years ago before AES-NI was a thing, yes. Nowadays, if you have a PC from the last 10 years, while technically it is slower the difference is so little it's unnoticeable whatsoever. Test it yourself by making an encrypted block device in a file using cryptsetup and benchmarking it. On my machine theres no difference.

is there a way to encrypt the entire drive outside of the OS? I don't trust microsoft's bitlocker
You can use veracrypt for windows, but I warn you it is a buggy pile of shit and you might lose your data.
Bitlocker is fine if your afraid of your mom finding your porn or someone stealing your PC. If your afraid of getting raided by the NSA, probably shouldn't be using windows in the first place.
