I'm in this boat too, although NixOS seems nice if it gets more mature. I'd love to just keep my distro configuration in a slim self-hosted git repo.

On the baremetal my choice goes to Arch on both laptop and workstation.
I have been a long time Debian fan and still am for servers and anything that needs to deliver consistent uptime.

I'm currently on fedora with only security upgrades but you get tired of updates. CentOS only has all in one upgrades but they are small so you don't have to reboot often. I'll probably switch to it again and end the hopping.
this, testing and Sid are fucking broken most of the time and they tell it in your face. They are not a priority. Ubuntu has new packages as a priority so it would break or get fixed faster.
is there any difference between ubuntu minimal and debian netinstall?
isn't ubuntu just debian + preconfigured packages?
why should i go for debian if ubuntu is rolling release?
