get a kobo and flash it with android. itll still try to call home but it wont understand how its own antenna works.
besides, they can get up to 20fps which is enough for anyone
just buy a Paperwhite and put it in airplane mode like everyone else

Someone recommended the Likebook Mars in an earlier thread and it does look extremely interesting.
But it will still phone home of course, much more with gapps installed.
But at least you get the freedom to choose whatever apps you want. Now this only needs root.
It's too bad there is so little custom rom development going on for e-readers.
As others said don't connect it to the internet and just transfer your books via USB
