any kind of nanny cam/off the shelf security camera would work
they come with easy-to-use apps that let you check in from your phone/PC whenever you want, move the camera manually,
or even have 2-way conversations through it

you'll be able to find ones for $50-$100 that do the trick, but expect the user experience to be a bit janky,
and you'll have to manually empty the SD card every now and then
(or pay for a subscription)
you could also DIY your own camera
and configure it to stream directly to your/her computer

just get a webcam that can be remotely controlled.
google remotely controlled webcams/security cams.
security cams will have built-in console with streaming abilities. all you would have to do is port forward on your router.

its extremely easy to turn a simple webcam into an IP camera.
Yawcam is what i use when i want to monitor my dog. i have some early 2000s webcam that i take out of the closet and just hook it up to my computer.
i also have an android phone that i just downloaded a free app to stream.
only thing i dont like about that is that you need to have it powered the entire time.
