Is there anything Windows 7 can’t do that Windows 10 can? I have 7 Ultimate booted along with Gentoo and Win 10 LTSC, and I can’t seem to find any applications that only can run on 10.

Leaving hardware-specific issues aside, the only true disadvantage it has is that it can't run full DX12 applications or Windows Store apps. It's a pretty subjective issue though (if you don't play videogames, you probably won't care at all.)
