I've never found raspberry pi's very useful for anything that can be done by a more powerful, stationary machine (like a desktop computer). Many of the suggestions here are for things like DNS adblockers, which don't really leverage the portability of these little guys.
The way I see it, my raspberry pi is basically a programmable chromecast. It's got hdmi and it's easy to get a wifi usb for it (not sure if the newer ones have this built in). That leads me to think the best use cases would be for the ones that allow you to throw an entire entertainment-oriented environment into a bag, bring it to a friends place or even a hotel while traveling, and set up that environment really quickly. So some ideas along that line would be:
- make a mouse controller from your phone so you can use it plugged into a tv
- make a nice wrapper for streaming sites
- make a game like jacktv
- make trippy animations
- set up a music streaming server like mopidy
newer ones have wifi built in

add a few proximity sensors, a camera and your Pi. Make yourself a robot car, that comes to you for your command, chases thrown blue ball and what else.
Don't add speakers, make it communicate entirely with motors' sounds

It's great for office, displaying a webpage with stats on it. Monitoring your inbound and outbound connections. Act as web kiosk if needed. But it's underpowered as fuck, if someone was looking to buy a new one, I would recommend Pine Rock64 instead, more RAM, fast ssd and same price
Mine has been used as a pihole for the past 6 months. Go a couple of zeros on the way for indoor/outdoor environment monitoring.
