What does everyone here use? I tried signing up for Gmail so I can have YouTube etc but no fucking way is Google getting my phone number. What are some alternatives that don't have to verify my entire life?

Run your own email server OP. I run one using mailcow but you can use mail in a box, iredmail, ect. all are super easy and you can customize it like you want.

You can register a "Google" account with any other email provider. And you get access to all of Google services except Gmail. You will get any emails to the service you use.

ovh VPS with, postfix running on it, since I don't really trust the VPS I was thinking of getting some sure of reverse proxy to my home server so the actual server software and tls certificate runs on my home server while using the ovh VPS public IP, but what's the point? Everyone uses gmail anyway ;_;
If I setup like explained before I increase the likelihood of server failure/downtime and no one will ever email me from their own server anyway, so I bet just keep running the mail server on the VPS.

protonmail doesn't support imap unless you pay for it, protonmail is also probably a honeypot together with tutanota.
If you want imap without paying for it your best choice is probably cockmail though it doesn't look good on your resume.
As a non-american I also use a local mail service from my country for government and bank stuff, since it those emails come from within the country it's better to have a small circuit than having the data cross the oceans.
tl;dr unless you convince your correspondents to use gpg (impossible in practice) there's no way you're going to use email while escaping the botnet.

Email (IMAP + SMTP) does not support end-to-end encryption, period. There are extensions to the protocol that do e2e, but these only work for servers that support them. So if I send an email from my protonmail to my friend's AOL mail, you'd better believe that a bunch of people in the middle can see what's being sent.

Email is great for what it does, but if you want anonymity and end-to-end encrypted messages, you should be looking elsewhere.
