In the United States roofs need to be designed for a live load of 20psf. Snow loads in the northern regions typically govern. Depending on how far north you go they typically range from 30psf to 40psf.
Soils range from 100pcf to 130pcf roughly depending on composition. You probably need 8" at least to grow plants -- this would be 80psf right there.

Slabs/decks will be designed right to the design loads to save money since you'll likely have a lot of slab/deck. The same can be said for beams/purlins/girders but they are more likely than slabs to have extra capacity for a little bit of additional load, although not much.

I used to install green roofs for about 3 years in the early 90s. It was a neat job. The only time we had to reinforce anything was for a 2x4 framed roof that had the trusses too far apart (24" centers). Most of the roofs were just for growing grass, but some were for vegetable gardens.

Aeroponics would be the least amount of weight since it can be designed so that there's only incoming pipes for the sprayers and outgoing pipes for waste water.
