If you use Windows for work, there's no reason to spit on performance improvements, unless they come with additional security risks. This applies to other operating systems as well.

LTSB/LTSC does not get bug fixes, only security updates. Running a older version is being stuck with those bugs. Including performance improvements. Also, even though MS supports LTSB/LTSC for a long time, many companies like Nvidia don't and drop support for older versions.
