It doesn't because the certs are shipped in the .zip with extensions that's why it takes so much time to fix, otherwise you could just issue a new cert and everything would stop working again rather quickly.

Yeah pretty much they started "force signing" extensions a while ago, if you go to your profile folder and where the extensions are and unpack any of the .zip files, you'll see there's keys in the META-INF folder (mozilla.rsa), if you run it through openssl you'll see that each of these extension has a certain expiration date where they will just stop working after that.
As long as they had kept up on their renewals it would've kept working indefinitely.

My educated guess is that they only check the validity of signatures every so often.

in about:config. It's a unix timestamp when your browser last verified the certs. I have no confirmation that it actually helps, but I set mine from 17 hours ago to today, hoping they only check after ~24 hours.

I already explained this to someone in another thread. X.509 certificates must have expiration dates, which are checked offline as part of the verification process. You can't issue an X.509 certificate that lasts forever. And, ultimately, the certificate authority decides how long is appropriate.
Regardless of what you think about add-ons having certificates that expire, Firefox is not phoning home to Mozilla to perform the check.
If I want telemetery I rather install Chrome over Waterfox.
