You get root access on MacOS out of the box. sudo, core utils, terminal emulation, ssh, etc.
The only thing you can't do out of the box is modify core system files, but if you REALLY want to do that, you can disable it in single user mode once and have it gone forever.

You can install Linux and other OSes on Macs easily. They even provide a tool to install Windows.
And no, you can disable secure boot out of the box as well.
