Perhaps you want to have your volume accessible from OSs other than Windows.
Without corruption risks, that is.

fixing the volume after a poorly timed eject or power loss requires using windows, i think - not sure if ntfsfix does the job properly
writing to ntfs volumes on macos requires jumping through some hoops
using ntfs volumes on android is extremely painful as far as i know
i think that's about it. ntfs is probably a better choice than exfat to be honest.

You shouldn't unless you want boot USB. Any modern os will support ntfs, just format on windows otherwise you may run into weird bugs because the way macos formats it otherwise it works fine. Ubuntu read it fine so its probably just really old dos/linux stuff that would be a problem.

Well, if you decide to use RUFUS to make a bootable Windows install disk, and you happen to format to NTFS, you need to disable secure boot to install Windows from that USB stick. Not a problem with FAT FS though
