because all the mail sent and received by a user's account is encrypted using a user's key. only the key holder can read any messages stored in their inbox/outbox/sent. if you're emailing someone outside of protonmail, the message is decrypted and sent normally. if you were sending mail from one protonmail account to another, it's 100% encrypted. nobody can see anything without the keys.
