a lot of this has to do with the fact that people with an iphone usually install 3rd party apps so that they can actually do stuff with your phone. the stock iphone apps may not teack you, but anything 3rd party sure as hell will. Iphones are a scam at this point in tine. all apple has going for them is the integration between their devices like handoff and screen sharing

Just with facebook alone, 90% of apps phone home to it. They've been getting massively fixed though
google is a whole different story.
Apple also phones home to facebook in 90% of apps, google probably 70% of the apps or more phone to it, since they use the google services.
Tons of apps send data to both, which is why the 90% and 70% overlap.
Unlike android, apple doesn't have good alternatives for open apps
