I'm convinced Chrome is an example of Google creating the product it knows people wanted and then slowly replacing all the parts people liked with more aggressive tracking.

Well one, ads are worth more the more you know about the people seeing them. Brave has a direct financial incentive to backslide on user privacy. Because they're an ad company.

Two, think about what an ad is for a second. Someone tries to distract you from whatever it is that you're doing and get you to pay attention to something you didn't want to be doing. That something is an attempt to cajole or deceive you into spending money that you wouldn't have otherwise spent. Tell me, even in the absence of tracking, why is this a business model that we ought to go along with?

If we want to make a dent in tracking across the web, the way to do that is to kick the financial-incentive stool out from under it. In other words, since tracking is done for advertising purposes, we need to make advertising no longer a viable way to make money on the internet. Yes, that will put a lot of sites out of business. Good riddance to bad rubbish, I say.
