I think you'd like the acme(1) programming environment included in plan9port.

Write it on paper first. If you MUST write on the computer first, use a WYSIWG editor that lets you see the document as actual pages, like Libreoffice. Writing a book in something that isn't displayed as pages (or uses a monospaced font, is tailored for programmers and not writers, etc....) completely kills creativity.

Vim doesn't wrap text. You need to press Enter at the end of every line, or you'll just wind up writing your entire book on one ridiculously long line. I hate Emacs, but if you want to write a book, I think that's the one you'd have to go with.
