Pretty decent user, I had it on my laptop for ~9 months or so. I would encourage you to try Antergos as well, best out-of=the-box Linux experience I've had.

After you get confident enough with mint, try debian net installer in a virtual machine and mix and match desktops and packages.
Debian netisnt is lightweight enough to give you loads of freedom but also holds your hands a tiny bit and doesn't break all the time. Build your dream OS.
Then after that you install debian on your actual computer but that's a long way to go.

Alternatively, once you want to try other distros, try ubuntu's sub distros: vanilla ubuntu, kubunty, ubuntu mate, Lubuntu and xubuntu. They give a nice impression of GNOME, KDE, MATE, LXDE/LXQt, and XFCE, desktop environments, and these drive your expectations a lot as a noobie.

I wouldnt use mint, but I see no reason to hate it. It's a good point of entrance for new linux users. Kinda bloated yes, but that's the cost for making it accesible towards new users.

No, vanilla Ubuntu has GNOME deeply woven into it.. I recommend XFCE - great customization, lightweight and concise design.

use it for a while then install something minimal like arch or void linux, i installed arch a couple weeks ago and it was somewhat hard, i had to configure everything from sounds to my touchpad, i mean wifi wasn't even working
but you will learn stuff in the process i highly recommend trying a minimal Linux install
