Actually while I'm here, is there a recommended way of getting rid of interlacing in my DVD rips? They're in uncompressed MKV format if that helps.

DVD ripping is always free with MakeMKV. You have to register to rip Blu-Rays after the trial period ended.

That's unfortunately a very extensive and difficult topic.
To sum it up: If you're lucky you can perform IVTC, if you're unlucky you have to deinterlace with one of the many available deinterlacers (e.g. yadif). In both cases there's no guarantee to completely get rid of all interlacing artifacts and you have to reencode the footage in the process.
