GNU coreutils are Unix-like utilities, same names and same options (mostly, around 90%), just implemented by GNU developers on their own way.
This is why the recursive acronym "GNU" means "GNU is Not Unix", but still inspired by Unix.
Also, for the sake of be clear, saying "Unix utilities" is a way of say "All Unix spinoffs" (GNU, BSD, Busybox, Sbase, etc) that can be used for the same tasks.

GNU is not unix in licensing, but in design too. Unix focus on retarded mininalism and GNU got the most features in a small package. If you are gonna talk about unix-like utilities, talk about *nix or unix-like. Calling stuff unix can get you sued.
