Your video card can probably run 3-4 monitors alone. I like to have extras to watch multiple video streams especially for live events, then keep a monitor for the sound mixer so I can output each stream's audio to the right place. Then discussion threads for the live events. Here's an example from SGDQ/NBC Democratic Debate.

Also I like to spread a moving star field over all the monitors and it looks like I'm in a spaceship.
