Server 2012 represent. It is the perfect blend of windows. All the newer features you want like flawless ISO mounting, better unobtrusive UI compared to Win 7. I prefer the start page to the Win 7 or Win 10 start menu, it's easy to organise all of your program shortcuts visually instead of having to scroll through a list. The rest of the metro interface is trash, obviously, but you can completely ignore it. No Cortana at all, and you can even decide not to install the unnecessary windows desktop components. Main downside is that it's a little fiddly to first set up if your use case is media, since lots of libraries have to be manually installed.
