My favorite is Music On Console, a terminal player that can still run if you close the interface. Although you can make Audacious look like Winamp with a skin, I liked that too.

Most just run mpd and access it using ncmpcpp. Others use cmus. I prefer mpd because I have the mpdroid application on my phone so I can control the music remotely without fucking around with ssh shit.

Closest thing to foobar is actually Quod Libet, which is also, like, the best GUI music player ever made.

If you want to run a "radio" like setup where you connect to a service on a deskop from multiple clients like laptops/phones then mpd and ncmpcpp.
If you just want something that works out of box, cmus.
