If it still being updated then I wouldn't use a custom ROM at all. Ask XDA users, they only use custom ROMs when there's no more updates coming to their phone so they can squeeze a few more years out of their phone.

either one is a good choice, buy the Note 7 if you want to save money and install a custom ROM if you're worried about security considering they get security updates as well

Maybe you're confusing UI updates and security patches with Android version upgrades. Most phones only get 1 or 2 major Android versions, for Redmi it's usually only one.
