Started not too long ago and it is way too easy to get that much storage used. And I just marathon them in bursts, so most I have yet to watch.

Movies, TV shows and anime.
When you have a couple dozen 50-ep seasons at 600-900MB/episode, you fill up space pretty big (like, 500GB+ big).

and then there's encodes of 12-ep shows but each episode is like 2GB
or when you've got old shows where much of the encode size is because of film grain

Just don't really watch that many movies, probably have around ~30 FHD and HD ones, maybe around ~70 albums downloaded in high end mp3 or opus

Don't do that. H.264 is the superior format for archiving for several reasons i'm not gonna go into right now.
Also, transcoding will absolutely destroy your quality.

I bought my current Macbook with 8gb memory and 256GB SSD in 2013. I suspect my next laptop will have 8GB of memory and a 256GB SSD as well. I'll never upgrade this thing if it never breaks (I can't tell the difference btween it and a new Macbook in use, except that it has a good keyboard).

Should mention I am doing this for my backup, so my 1:1 backup is 264->265.

i have about 3tb total not including backups, most of it is taken up by virtual machines right now, but my 4k rips alone put me well above 500gb and i only have like 60 movies

Some turboautists encode anime in 1080p 2gb per episode. Average anime is 12 episodes - 24gb. Storing only 10 such anime would take 240gb.

Turboautists wouldn't download transcodes though, but Blu-Ray remuxes.
