There were some pretty cool automatic sawmills, power looms, wool machines, and agricultural machines. A horse/steam powered hay press or steam locomotives are surprisingly complex. But, I'll go with time keeping mechanisms & calculators. It isn't just that they are complex, but that the support system, tools, calculations, and methods required to create such precision mechanisms is what is most complex.
