According to your own link XMPP wins over Matrix. Also, spinning up a XMPP server is very easy compared to a Matrix server. A XMPP server will take less resources also. Matrix has its uses like enterprisey needs but XMPP is still better for just chatting.

Muh extension isn't an answer. The flagship client, Conversations, doesn't support calls. You can't make a call to someone using a client with no call support.

matrix synapse runs like absolute shit. the protocol and implementation is better than anything that exists though
once dendrite or even the construct is out, it'll be a lot nicer to run a server for it

maybe the protocol how it is now, which should be expected for something 20 years old vs something 4 years old
the hilarity of XMPP though is it has no clients. The ONLY client that implements things correctly is the "conversations" app on android and forks of it.
Maybe if someone forked it to desktop then it'd work. But as it is now every desktop app on every operating system is broken somewhere and somehow.
another question, what XMPP server should you use, when self hosting? I mean, you might have apache for a web server, what's a good XMPP that I can run on a rapsi or something and set up as an onion service at home (domains are annoying)
