Veracrypt is probably the best of it's type, but LUKS w dm-crypt and other open source stuff are fine too. There are also some other open source application like Diskcryptor or Cryptomator depending on your specific needs

Encryption is hard to trust.
It's better that you keep the data hidden in addition to encrypted.
They can't decrypt what cannot be found.
